THE
PRODUCES Cabardès producers are keen to have you discover or rediscover real farm produce. Montagne Noire producers open their doors to offer tasting of duck foie gras, salamis, patés, hams, goat cheeses, beef, as well as daguets, onions, honey, milk jam or even snails. A journey in the montagne Noire has to include a detour via Castelnaudary, 30 minutes away, to taste the famous original cassoulet. Here are a few addresses: - Picarel le Haut, in Saissac: Sanctuary for 450 deer. Guided visit and produce tasting (meat, patés...) - L'Escargotière, in Montolieu: 250,000 snails being bred in respect of natural rhythms. Sale and tasting on site. - Le Colombier, in Cuxac Cabardès: alpine goats bred following the rules of organic farming. Sale and tasting of cheeses at the farm. Also possibility to have an afternoon snack. |
